Massaman Lamb Curry#

Inspired by RecipeTinEats Lamb Shanks Massaman

Ingredients#

  • 2 onions
  • 800g potato
  • Lamb shoulder roast
  • 2 star anise
  • 2 cinnamon sticks
  • 2 tins Maesri Massaman curry paste
  • 800ml coconut milk
  • 1 litre chicken broth

Garnish - Red chilli - Coriander

Method#

  1. Preheat oven to 180c
  2. Combine curry paste, coconut milk and stock in dutch oven
  3. Add onion, potato, star anise and cinnamon
  4. Add lamb and coat
  5. Bake for 2 hours
  6. Remove cover and bake for 1.5 hours, turning lamb every 30 minutes
  7. Remove lamb, skim off excess fat, mix sauce
  8. Break part lamb and return to sauce
