Massaman Lamb Curry#
Inspired by RecipeTinEats Lamb Shanks Massaman
Ingredients#
- 2 onions
- 800g potato
- Lamb shoulder roast
- 2 star anise
- 2 cinnamon sticks
- 2 tins Maesri Massaman curry paste
- 800ml coconut milk
- 1 litre chicken broth
Garnish - Red chilli - Coriander
Method#
- Preheat oven to 180c
- Combine curry paste, coconut milk and stock in dutch oven
- Add onion, potato, star anise and cinnamon
- Add lamb and coat
- Bake for 2 hours
- Remove cover and bake for 1.5 hours, turning lamb every 30 minutes
- Remove lamb, skim off excess fat, mix sauce
- Break part lamb and return to sauce
